Bihar Famous Food Recipes: Famous dishes of Bihar

1. Dal Pitha

1. Dal Pitha

To make it, start by soaking rice and chana dal separately for about 3–4 hours. Grind the soaked rice into a smooth paste and mix in a pinch of salt. Cook this paste in a pan over low heat, stirring continuously until it thickens and dries out—this forms your dough.

Next, grind the soaked chana dal along with green chilies, ginger, and garlic to make a flavorful filling. Sauté this mixture in a bit of oil for about 5–6 minutes. Once it cools slightly, shape small balls of the rice dough, flatten them, and stuff each one with the lentil filling.

Finally, steam the stuffed dumplings in an idli cooker or steamer for 10–15 minutes. When done, you’ll have soft, aromatic Dal Pithas ready to serve—a true taste of Bihar’s traditional cuisine.

2. Malpua

2. Malpua

This delightful Bihari sweet is traditionally prepared during festivals and special occasions. To make it, begin by combining flour and semolina, then gradually add a little milk to form a smooth batter. Cover the mixture and let it rest for about 15 minutes.

Meanwhile, prepare the sugar syrup. In a pan, mix 1 cup of sugar with 1 cup of water, and add a touch of cardamom and a few strands of saffron for aroma and flavor.

Next, heat ghee in a non-stick pan. Shape the batter into small rounds or pour small portions into the hot ghee. Fry them on medium heat until they puff up and turn a beautiful golden brown. Once fried, transfer the Malpuas directly into the warm sugar syrup and let them soak for about 4–5 minutes.

Serve these delicious, syrup-soaked Malpuas hot — a perfect treat that captures the authentic sweetness of Bihar.

3. Sattu Paratha

3. Sattu Paratha

You’ve likely tasted sattu before, but have you ever enjoyed it stuffed inside a paratha? Sattu Paratha is a popular Bihari delicacy known for its earthy flavor and wholesome taste.

To prepare it, start by kneading a soft wheat flour dough. For the filling, mix sattu with garlic and ginger paste, finely chopped onions, lemon juice, dry mango powder, fresh coriander, green chilies, and a pinch of carom seeds. Blend everything well to create a flavorful stuffing.

Next, take small portions of the dough, fill them with the sattu mixture, and roll them out into parathas. Cook each paratha on a hot griddle with a drizzle of ghee or oil until both sides turn golden and crisp.

Serve these delicious Sattu Parathas hot, paired with chutney or pickle for an authentic Bihari experience.

4. Makhana Kheer

4. Makhana Kheer

The Darbhanga district of Bihar is famous across India for its delicious Makhana Kheer. To prepare this rich dessert, start by lightly roasting makhana (fox nuts) in a bit of ghee until they become crisp.

In another pot, boil milk and then add the roasted makhana to it. Let it simmer on low heat, allowing the makhana to soften and the milk to thicken. Next, mix in a handful of chopped dry fruits and continue cooking until the kheer reaches a creamy consistency.

Finally, add cardamom powder and sugar for flavor, stirring well to blend everything together. Once done, garnish your Makhana Kheer with saffron strands and serve it warm or chilled — a true taste of Bihar’s traditional sweetness.
