Begin by heating the oil in a pressure cooker. Add mustard seeds, cumin seeds, and a pinch of asafoetida, then allow them to crackle.
Next, incorporate fenugreek and curry leaves, and simmer on low heat
Then, incorporate the chopped onions, green chillies, and tomatoes. Cook until the tomatoes become tender. Season with salt and allow it to simmer on low heat.
Once the tomatoes have become tender, incorporate the vegetables of your preference
Incorporate turmeric powder, red chili powder, and sambar masala. Add the soaked turdal and pour in enough water to cover the mixture.
Heat oil in a pan and add whole red chilies and curry leaves
Pour the seasoning over the sambar, garnish with fresh cilantro leaves, and serve hot
